Focaccia - Italian bread made with olive oil and herbs, rosemary in this one. Looks a bit pale, was in hurry for lunch :)
Recipe
500g White Bread Flour
300ml Warm Water (adjust depending on your flours absorbency)
7g Quick Action Yeast
10g Sea Salt
40ml Olive Oil
Handful of mixed dried herbs (e.g. rosemary and basil)
Method
Mix the flour, water, yeast, half the salt, half the herbs and 20ml of the oil until you have a smooth ball of dough. Probably 10 minutes by hand or 5-6 in a mixer on low.
Set aside to prove for an hour and half at about 26c if you can, longer if at lower temperature, until roughly double in size. Knock it back 2/3rds of the way through if it rises enough.
Set your over to 220c so it has a while to heat up. Oil or use greaseproof in a large shallow pan, say 30x20 or larger if you want thinner focaccia. Tip the dough in and leave to rise for another 30-45 minutes or until risen again.
When risen push 8-10 finger holes into the dough and drizzle the remainder of the oil into them and brush across the dough. Sprinkle the reset of the salt and herbs on top.
Pop into the oven for 20-30 minutes depending on the depth, less time for a thinner dough mix and remove when cooked. Leave to cool.
